Do you ever have those days where your cupboards are practically empty? Well today was one of those days for me. I finally scrounged around in the freezer and found a random frozen meal which was filled with tomatoes… So I carefully picked them all out and was left with a balsamic chicken pasta dish. It tasted pretty good for the lack of options I had.
This was a yummy BIG salad I enjoyed for lunch. The SnapDragon oil free vinaigrette is awesome because two tablespoons is only 10 calories. You could put the perfect amount of dressing without feeling like your whole days worth of calories are going on your lettuce… like when using Ranch dressing. I used baby lettuce (20 calories), 2 oz. of chicken (50 calories), 6 dry roasted almonds chopped (50 calories), some grated cheddar cheese (50 calories) and gluten free Java Sesame Dressing (15 calories). Yum! My favorite meals are the ones where you can eat tons of good food without all the calories.
Tonight for dinner I made gluten free Chicken Pad Thai. At this moment in time I can’t actually tell you how many calories are in it because I haven’t added them up yet. I would guess it was at least a 500 calorie meal. This is something we don’t make very often because it’s higher calorie but it’s so delicious!
My favorite soda is probably Ginger Ale so I thought I’d try out the new 10 calorie kind. It was good, not quite as good as regular Ginger Ale but still pleasing to my pallet.
For dinner tonight I enjoyed a nice large cobb salad. It included lettuce (20 calories), ham (25 calories), chicken (50 calories), turkey bacon (60 calories), cheddar cheese (80 calories), avocado (30 calories), and egg (70 calories). Also, my mom and I discovered a 1/2 cup cottage cheese (100 calories) is a good alternative to ranch dressing and just as satisfying! Yay for yummy dinners and healthy alternatives! Total = 435 calories.
Today I made fried rice using grated cauliflower instead of rice. I accidentally made it a little spicier than I liked so I did add 1/4 cup of rice to it at the end.
I am always willing to try a healthier version of something that I love. If I can eat a larger quantity with less calories than I’m willing. Some changes aren’t worth it though and I’m not sure I think cauliflower is a worth it change. If you make regular fried rice and you put lots of veggies and some protein in it then using 1/2 cup rice goes a long way. You have a nice size portion and your meal wouldn’t be above 260 calories (less with certain changes). For this portion size I realized I would use half as much chicken, that alone would take off 25 calories.
This dish was 240 calories. If I had not added the 1/4 cup rice then it would have only been 180 calories. Yes, cauliflower is less calories but it only tasted fine to me. I like delicious! So in my opinion… stick with rice.
For lunch today I experimented with salad making. I have never minded salad, just as long as it was covered in ranch. Most the time I think lettuce is a little on the bitter side so I like to mask its flavor with some fatty dressing. Today though I have a new love and appreciation for salad. I learned today that baby lettuce is the best! It is small pieces (which I like) and no bitterness. I will be buying this from now and would even like to grow it this summer. On top of it my mom came across a tasty new dressing that I actually like! I will share this amazingness with you…. recipe below:
Chicken & Almond Salad with Plum Vinaigrette
2 cups baby lettuce
2 oz. chicken, sliced thinly, cooked with a little salt
2 tsp. Parmesan cheese
4 dry roasted almonds chopped into small pieces
2 tsp. SnapDragon Kyoto Plum Oil-Free Vinaigrette
This adds up to only 135 calories!
