Roasted Potatoes with Garlic Butter
10 servings; 238 calories each
8 medium Yukon Gold potatoes, peeled
3 medium sweet potatoes
2 Tbsp. canola oil
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup butter
3 garlic cloves, minced
1 Tbsp. minced fresh thyme or 1 tsp. dried thyme
1/2 cup shredded cheddar cheese
1/3 cup grated Parmesan cheese
1) Cut Yukon Gold and sweet potatoes into 1/8 inch slices. Toss with oil, salt and pepper. Spread on 2 greased cookie sheets and roast at 425 degrees for 17-20 minutes or until tender.
2) While cooking melt butter over medium heat and saute garlic and thyme. Cook and stir for 1 minute. Transfer roasted potatoes to a large bowl, add butter mixture and toss to coat. Sprinkle with cheeses and mix.
3) Serve and enjoy!
