We still had prepared veggies and meat leftover from our bibimbap the other night so I made some kimbap with them. Kimbap is a Korean like sushi minus raw fish.
The rice is mixed with a tiny bit of sesame oil and sugar and spread on nori seaweed. The filling is then laid down and includes bulgogi (beef marinated in bulgogi sauce), blanched carrots and spinach, pickled diakon radish (Oh no! I just realized I forgot to put this on mine) and some fried egg.
It tastes wonderful on it’s own but I like to dip mine in a sauce made from Ponzu (citrus marinade), Tamari gluten free soy sauce, red pepper flakes and toasted sesame seeds. Such a good snack and equalled only 170 calories.
