This is one of my favorite dinners! Bibimbap is a korean dish that means “mixed rice.” I blanched carrots, spinach and bean sprouts (added a little sesame oil for flavor). The zucchini was sauteed with a little salt. Then we cooked up some beef and mushrooms marinated in bulgogi sauce. This all was arranged around a half cup rice. Then a fried egg is placed in the center. After the bowl (or in my case pie pan) is arranged you add some sauce, a red pepper honey paste. Best meal ever! This all totaled to about 500 calories. Made my night. This has been a long day, I’m glad it’s coming to a close!
