I will tell you straight up, this is a fatty meal. And it was delicious! I feel ok eating the occasional dinner like this though if I am choosing the healthier options throughout my day. For tonight I had 8 shrimp at 80 calories and 12 g of protein. 1/2 cup creamy cumin grits at 325 calories, a lot of fat and 9 g of protein (I may have taken a few extra bites here and there as it was being made…).
The asparagus I over cooked so they were soggier than I would have liked. I drizzled a little sesame oil and salt on them for flavor.
