4/3: Rice, Blackened Tilapia with Greens Topped with a GF Plum Vinaigrette and Parmesan

For dinner I had half a cup rice topped with baked blackened Tilapia (nice and spicy). Then I topped a green salad with gluten free plum vinaigrette and a sprinkle of parmesan cheese.
