3/28: Chicken and Rice with GF Peanut Sauce and Lettuce

This is one of my favorite quick and healthy meals. I take rice, 4 oz. of Costco Rotisserie chicken and top it with GF Peanut Sauce. I mix that together and eat it in a lettuce leaf.
