Because I think this is the BEST cornbread I thought I’d give you a better picture and pass on the recipe. This is a recipe my mom created and it has the perfect texture and taste! It can be made Gluten Free as well.
3/4 cup cornmeal
1 cup whole wheat pastry flour (white flour and GF flour work just as well)
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup skim milk
1 egg (beaten)
2 tablespoons canola oil
2 tablespoons margarine or butter
2 tablespoons honey
Preheat oven to 400.
Combine dry ingredients. Add milk, egg and oil. Stir until well mixed. Coat 9 inch square pan with non-stick cooking spray. Bake until knife inserted in center comes out clean (approximately 20 minutes).
Combine margarine and honey and spread over top of hot cornbread.
