3/22: Lemon Chia Seed Cake with Almond Cream Cheese Frosting and Amaretto Coffee

I made a new lemon poppyseed cake recipe today but tried using chia seeds instead. The chia seeds taste fine but about five minutes after you eat the cake you realize there are gummy things stuck in your teeth. If you have to choose.. pick poppyseeds. I made a almond cream cheese frosting that didn’t turn out as thick as I’d like. Of course I had to have coffee to go with it. I had a nice time with my hubby watching Castle and eating sweets.
