In our rush to get on the road tonight as well as visiting family I had some snacks I didn’t get a chance to take pictures of. I did have seconds on dinner. I made GF Crumb Cake to bring to my mother-in-law’s house and ate a piece to make sure it had turned out (I will have a piece tomorrow so you will be able to see a picture and I will give you the recipe as well). I ate 3 peeps (another Easter favorite of mine) and munched on some parmesan popcorn I shared with Jeffrey. I just wanted to make sure I was being honest about all my snackies!
My posts are a little out of order so this was actually my dinner rather than a midnight snack. My sister-in-law gave me this recipe and it is both delicious and simple!
Sometimes to save yourself from eating out it’s worth it to have quick and easy meals like this. Tonight we went to an Easter service at 5pm and I wanted to make sure we had something to eat before we left for my mother-in-law’s house this evening. I cooked everything up but left the pasta a little under done. I then tossed everything into the crockpot and set it to keep warm. When we got home it was warm and ready to eat.
Ham and Pea Alfredo with GF Rice Pasta Recipe:
2 cups ham (I use Kirkland Ham Sandwich Meat)
2 cups pea pods
1/2 tsp. dried oregano
1/8 tsp. pepper
Saute ham and peas in a little oil with oregano and pepper. Add alfredo sauce to pan and then stir in cooked pasta. Enjoy!
My mother-in-law got a milk steamer for Christmas and after having it for a week she loved it! I researched them online but kept coming across negative reviews. I became wary of buying one for myself because there was a common complaint of the steamers dieing after a couple weeks and others said they became very noisy. My MILs had her steamer now for 4 months and it’s still working excellent and isn’t make any noise. It makes me want to look back into getting one again.
When we arrived at my mother-in-law’s house she made up a nice pot of hot coffee and steamed up some milk. There is something about frothy milk that makes coffee twenty times better! If I could make lattes at home I think it would save us lots of money!
My little family and I are down visiting my mother-in-law for Easter. I had a coupon with my Starbuck’s rewards card so we shared a big caramel macchiato. Manly had a couple hour drive to make after working all day so we felt we needed some caffeine for our road trip.
This is a good healthy snack and it can all be found at Costco. I laid out 15 Gluten Free Multi Grain Crackers which are made from Sesame, Amaranth, Chia, Flaxseed and Quinoa (130 calories). I took a triangle of Laughing Cow Swiss Cheese (35 calories) and spread it on each of the crackers. I then sliced up one piece of lean Kirkland Ham and to put on each cracker (25 calories). This snack totals 190 calories.
Milk does NOT have the same creamy flavor as half and half. Utter disappointment this morning…
